Clean(ish) Eating Peanut Butter Granola

Since I started my clean(ish) eating diet, I’ve been eating nothing but plain yogurt and oatmeal for breakfast.  Plain yogurt one day.  Oatmeal the next.  Plain yogurt.  Oatmeal.  Plain yogurt.  Oatmeal.  Enough!  You know what I’ve been craving?

Granola.  I love granola.  It’s a satisfying bowl of salty, sweet, crunchy goodness.  So I’m discussing my love of granola and my husband tells me he loves granola.  And then my son pipes up and says he also loves granola.  Who knew?

So this morning I whipped up a quick batch of granola — clean eating peanut butter granola.  (I’ve also been on a peanut butter kick lately)

A word of caution:  This granola is very nutty and protein packed.  So start with a small serving.


  • 6 cups rolled oats
  • 1 1/2 cups roasted unsalted peanuts
  • 1 cup creamy salted roasted peanut butter  (I use Trader Joe’s PB)
  • 1 cup pure maple syrup
  • 2 tspns vanilla extract or 1 scraped vanilla pod
  • 1 tsp cinammon
  • 1/2 tsp nutmeg
  • 1/2 tsp cardamom

Preheat the oven to 325.  Combine the oats and nuts in a large bowl.  In a separate and smaller bowl, stir together the maple syrup and peanut butter until smooth.   Add the spices.  Pour the wet ingredients over the dry ingredients and stir together.

Spread the mixture onto a cookie sheet and cook for 40 minutes, stirring once about halfway through.
