Vegan Coconut Chocolate Chip Cookies

In honor of getting back to kung fu after too many late nights out (storytelling, nothing too crazy people), I give you my first completely vegan cookie!

I’ve always used a chocolate chip here, or some honey there, but these are 100% vegan. (I used a dairy free dark chocolate chip.)

Ingredients

3/4 cup coconut oil (measure solid, and then melt completely)

3/4 cup maple syrup

2 tsp vanilla extract

1 1/2 cups spelt flour

1 tsp baking soda

1 cup shredded unsweetened coconut

1 cup vegan dark chocolate chips

Preheat the oven to 325. Melt the coconut oil, and then whisk it together with the maple syrup and vanilla. Add the flour to this mixture, 1/2 cup at a time, and the baking soda, and then whisk completely. Finally, stir in the coconut and dark chocolate chips.

Using an ice cream scooper (or two spoons), drop small scoops of the dough onto a cookie sheet (either greased or covered with a silicone mat).  Bake for nine minutes, and then allow to cool completely.

These are so good, and relatively healthy too.  I’ll reflect on this good health while I’m eating a slice of pie this Thursday.
